Ingredients

a) 6 ounces bittersweet chocolate
b) ¾ cup unsalted butter cubed and softened
c) 2/3 cup granulated sugar
d) 4 eggs separated
e) 2/3 cup all-purpose flour

a) ¼ cup unsalted butter softened
b) 1/3 cup superfine sugar
c) 4 ounces bittersweet chocolate melted
d) 1/3 cup canned evaporated milk.

Preparation

The preparation of this Belgian chocolate cake is incredibly simple.

For the cake…
In the top of a double broiler you want to melt the chocolate over simmering water until smooth with no lumps at all. Then you want to let it cool slightly, and in a bowl cream the softened butter and sugar until fluffy, after which you beat in the melted chocolate and egg yolks until smooth.

Sift flour over the chocolate mixture and fold in, and then in another bowl you need to beat the egg whites until stiff peaks form. Fold into chocolate mixture using a whisk until no white streaks remain, and then butter a nine-inch spring-form pan, dusting lightly with cocoa powder.

Make sure that you shake off the excess and then you evenly spread the cake batter into the pan, and bake in a preheated oven at 350ºF for about 35 minutes until you can place a cake tester in the middle of the cake and have it come out clean.

You simply cream the butter with the sugar in a bowl until the mixture is light and fluffy, and then stir in the melted chocolate and evaporated milk until smooth. Spread over the top and sides of the cake.
